I love Saturdays! Its Tuesday now. Blah. Today my house is a mess and my daughter is teething, but last Saturday was spectacular. What a great day! Do you ever have just an truly relaxing, happy day and you just want to bottle it up so you can open in up, like a scent, any time you want to remember it. I just read the book Rebecca and the main character says something to that effect. Her husband asks her what memory she would bottle and she says “This one”. It was that kind of day. A whole day with my husband and sweet little girl. I took a late morning nap while my husband played with Stella. We bought doughnut holes and explored a beautiful metro park:
We walked the little Italian restaurant by our house and watched half of the Ohio State football game over Spaghetti and salad (We aren’t big sports watchers, so we only watched half. It was clear the Buckeyes were going to win by a long shot).
We played a few hours of a Nancy Drew game together. Silly, I know. One of the weird things I am addicted to. My husband is nice and plays with me. We take turns.
We read a book that is just starting to get exciting. I read to my husband. Its our favorite thing to do together. We are reading Warbreaker by Brandon Sanderson. We are kind of obsessed with Brandon Sanderson and are making our way through all of his books together.
It was not an exciting day, but beautiful, blissful day! If I could bottle three memories, I would bottle my wedding day, the day Stella was born, and last Saturday. I think the memory in the bottle would look and taste like a tropical green smoothie. It reminds me of beautiful day. It tastes sweet and happy and green is such an alive color to me.
Green smoothies are all the rage lately. I don’t really like smoothies that are heavy on the berries, so I made up this refreshing, healthy smoothie from mangoes, pineapples, and banana. There is no added sugar, its vegan, and its loaded with spinach!
Ingredients:
- 2 C. frozen mangoes and pineapples (I just poured some of each into a 2 cup measuring cup)
- 1/2 C. 100% orange juice
- 1 C. oat milk
- 1 tsp. coconut extract
- 1/3 C. oats
- 1/2 banana
- 2 C. loosely packed spinach
- 1 TBSP. chia seeds
Directions:
1. Throw in everything a blender and blend until smooth.
2. Pour into a glass and drink with a fun paper straw. (I have some super cool paper straws in my Amazon shop. Chevron straws, floral print straws polka dot straws, bamboo leaf straws…check them out here. Paper straws are so fun!)
