As I have mentioned before, I am married to a lover of beans (I consider chickpeas to be beans). My hubby loves beans and I know that if he cooks dinner I can almost expect there to be beans and lots of veggies. He has been begging me to make hummus for some time now, so the yesterday I had some ready when he came home and he was stoked! We polished off the whole batch and he immediately asked me when I was going to make more hummus.
In case you don’t know what hummus is, it is a simple dip made with chickpeas, Tahini (ground sesame seed paste), lemon juice and whatever spices and flavorings you want. It is usually eaten with pita chips, crackers, or veggies.
Ingredients:
- 1 (15 oz.) can chickpeas, rinsed
- 1/4 C. olive oil
- 1 clove garlic
- 2 TBSP. Tahini (Can be found in most grocery stores for a few dollars)
- 2 TBSP fresh lemon juice
- 1 tsp. cumin
- 1/4 tsp. smoked paprika
- salt to taste
Directions:
1. Combine all ingredients except paprika and salt in a food processor. Blend until smooth and creamy. You can also use a hand held stick blender. Make sure the garlic is ground in really well. Maybe even run it through a garlic press before adding it. My husband ate a big chunk of garlic that didn’t blend in and he was in tears because it was so strong.
2. Taste and add salt if needed. Sprinkle paprika over the top.
3. Serve with baked pita chips. I used store bought Trader Joe’s pita chips, but check out my sister in-law’s recipe for homemade pita chips. They look amazing!
