I LOVE PUMPKIN!!! I absolutely love cooking with pumpkin. I love it in this, this, and this. I have many more pumpkin recipes coming your way this fall. This recipe is supposedly a replica of Starbuck’s pumpkin scone. I would buy one of these! It is the perfect breakfast for a fall Saturday morning. I will definitely make these again and again. Make sure you don’t skip out on the glaze. It is what makes the scone.
Ingredients:
Scone:
- 2 C. all-purpose flour
- 7 TBSP. sugar
- 1 TBSP. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 tsp. ground ginger
- 6 TBSP. cold butter
- 1/2 C. canned pumpkin puree
- 3 TBSP. half-and-half
- 1 large egg
Spiced Glaze
- 1 C. powdered sugar plus 3 more TBSP
- 2 TBSP whole milk
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1 pinch ginger
- 1 pinch ground cloves
Directions:
- Preheat oven to 400 F. Lightly oil a baking sheet or line with parchment paper.
- Combine flour, sugar, baking powder, salt, and spices in a large bowl. Using a pastry blender, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious. (Note: I found that if you put the dry ingredients in the bowl of an electric mixer and then use the whisk attachment on high speed to cut the butter in, it gets the job done quickly and thoroughly). Set aside.
- In a separate bowl, whisk together pumpkin, half-and half, and egg. Fold wet ingredients into dry ingredients. Form dough into a ball.
- Pat dough out onto a lightly floured surface and form in into a 1-inch thick rectangle (about 9 inches long and 3 inches wide). Use a large knife or a pizza cutter, slice the dough twice through the width, making three equal portions. Cut those three slices diagonally so that you have 6 triangular slices of dough. Place on prepared baking sheet.
- Bake for 14-16 minutes. Scones should begin to turn light brown and puff up a lot. Place on a wire rack to cool
- TO MAKE THE GLAZE: mix the spiced glaze ingredients together and drizzle over each scone. This glaze really makes the scones great. Don’t leave it off!!!

Oh Amy- you have posted like 4 new things that I just have to make!!! You have been busy- I thought you were going to slow down, but it seems like you are just speeding up with yummy posts. I have 1/2 a can of pumpkin puree sitting in my fridge and it is just begging me to turn it into this… which I most certainly will.
