Yup, another soup recipe! I am just really loving soup right now. And this one is pretty easy. It is in a crock pot so you can just leave it. The thing I love about crockpot meals is that they fill your whole house up with yummy smells of yummy food. My family came and visited because my little brother had a soccer game here in Pocatello. When they came over there was a nice hot meal waiting for them. I fed six people with this soup and still had leftovers. It has an awesome Italian flavor.
Ingredients:
- 1 lb. Italian Sausage
- 1 onion, chopped finely
- 2 cloves garlic (pressed or minced) or 1.2 tsp. minced garlic
- 2 medium carrots, chopped
- 1 –2 stalks celery, chopped
- 1 (14.5 oz.) can Italian stewed tomatoes, undrained
- 1 (14.5oz) can Whole peeled tomatoes (optional), undrained
- 1 (8 oz) can tomato sauce
- 1/2 tsp dried basil
- 1/2 tsp. crushed dried rosemary
- 1 bay leaf
- 1 tsp. crushed dried oregano
- 1/2 tsp. dried thyme
- 1/4 tsp. celery salt
- 3 (14 oz.) cans chicken broth
- 2 small cans of mushrooms (drained) or 1 C. fresh mushrooms
- Cream or half-and-half (this is optional. I just added a little bit to thicken it up so it wasn’t so watery, but it would be fine to leave it out. )
- 1/2 C. pasta ( I suggest orzo, even though I used spiral)
- garlic powder and onion powder to taste
- Parmesan Cheese, shredded
Directions:
1. Brown sausage, onion and garlic on the stove top. Drain.
2. In a slow cooker add everything except the pasta and the parmesan. Cook on low for 8 hours or on high for 4 hours (or until the carrots and celery are cooked through)
3. Set pot to high and add the pasta for the last 20 minutes. I precooked the pasta and added it to the pot at the last minute because I didn’t have 20 minutes. Don’t let it continue to cook after the pasta is done. As you can see in my pictures, I did let it cook longer after I put the pasta in and it saturated with liquid and blew up in size and got really soggy. Still yummy though.
4. Top with parmesan cheese and enjoy!!!
