This week I had an epiphany: I really really like muffins. I am also trying really hard to think of good breakfasts to make. And I have loads of time to try new recipe’s right now. So I have been making lots of muffins lately and I have lots more ideas. I decided to post a new muffin recipe each week. Check each Saturday for a new muffin recipe. Oh and be sure to check out last week’s.
This particular muffin was fantastic. The blueberry and lemon flavor’s blended perfectly and the muffin its self was moist and fluffy.
Ingredients:
- 1/2 C. butter, softened
- 1 C. sugar
- 2 eggs
- 1/2 C. milk
- 2 TBSP. lemon juice
- 2 tsp. grated lemon peel
- 2 C. flour
- 2 tsp. baking powder
- dash of salt
- 2 C. blueberries
Glaze:
- 1-1/2 C. powdered sugar
- 2 TBSP. lemon juice
- 1 tsp. butter, melted
- 1/4 tsp. vanilla
Directions:
- Cream the butter and sugar. Add the eggs one at a time.
- Beat the milk, lemon juice, and lemon peel into the mixture.
- Add the dry ingredients. Fold in the blueberries.
- Bake at 400 degrees for 25-30 minutes.
- Mix the glaze ingredients and spread over the muffins.
