This is an adaptation of my sister-in law Lydia’s Mac and White sauce from her cooking blog.I just added garden fresh broccoli and cauliflower, chicken bullion, onions, and some other spices.
Ingredients:
- 2 1/2 T melted butter
- chopped onion (as much as you want)
- 3 T flour
- 1/3 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 cup milk
- 1T chicken bullion
- garlic salt(to taste)
- Onion powder (to taste)
- Crumbled bacon (optional)
- 1 C Mozzarella cheese
Directions:
1. In a pot cook butter and onions until the onions get a bit soggy. Then add the flour, salt, and pepper. Stir well. Then slowly stir in milk.
2. Mix in the bullion, garlic salt, onion powder, cheese, and bacon. I use more than most people probably would because I cook with spelt flour which has a more distinct taste than white flour. You can’t taste it in baked foods but in this sauce it sometimes stands out too much if i don’t cover it up with some other yummy flavors. Therefore, you might need to experiment with the levels of these spices and cheese according to your taste buds.
3. Bring to a boil. Boil for one minute, stirring constantly. If it doesn’t thicken enough, slowly sprinkle a little more flour but be careful; it may lump. Then add whatever vegetables you like. Broccoli and Cauliflower are my favorite. Squash and zucchini are also very good. This would also be yummy with chicken or shrimp! Go ahead and experiment! Pour it over any kind of pasta and enjoy!
