While serving a mission in England and Wales, my husband ate these all the time. They are fairly easy and the are yummy served with roast, potatoes, and gravy. The are good for sopping up the gravy, but are different than rolls. They pop up similar to pop-up pancakes.
INGREDIENTS
- 2/3 C. all-purpose flour
- 1 egg
- 1/2 C. milk
- oil or juice from roast
DIRECTIONS:
- Mix the flour, egg, milk together to form a smooth, thick batter.
- Place about 1/2 tsp. oil or juice from cooked roast (this just gives the yorkies a bit of a savory flavor) in the bottom of six ramekins or at the bottom of about 6-8 muffin tins. I doubled my recipe to fill the whole muffin tin, but I think I filled them too full. Place the muffin tin in the oven (400F) for about 3 minutes, until the oil is very hot.
- Working quickly, pour about a 2 TBSP of batter into the oil and bake for 15-20 minutes until they are puffy and golden brown.
- Serve at once with roast and gravy. They aren’t very good on their own, but they are awesome dipped in gravy.

I LOVE yorkshire pudding – even though my grand parents are German (not English) my mom used to make Yorkshire pudding every time she cooked a roast. From my experience your recipe requires salt. Also, the oil should be smoking slightly when you put the batter in – that's how you know its ready. All the recipes I have also call for a hotter oven (about 450F). Your yorkies look a bit under cooked – they should be brown and crispy on the top as well as the sides, and if they rise properly, should more than double from the height of the container. Yrkshire Pudding pans (which I have only ever seen for purchase in Yorkshire, England) are about an inch deep, but the puddings out of them are often 3 or 4 inches tall. Also having all the ingredients at room temperature really helps them poof up. I know it's unsolicited, but if you want to try yorkshire puddings again, I highly, highly, highly recommend this recipe from Allrecipes – its identical to the one my mom uses (except mom adds a bit of salt). Good yorkies should be delicious on their own.
