I know I said that I was going to post this recipe a while ago, but we have been staying at my parents house watching their puppy. After that we went to Boise so that my husband could take the MCAT. Speaking of my husband, he made this recipe. It is really yummy and quite spicy. You can serve it on sandwiches, tacos, or on these taquitos for a Cinco De Mayo meal.
INGREDIENTS:
- 1 C. mayonnaise
- 1 tsp. Dijon mustard
- 1 TBSP. freshly squeezed lime juice
- 1 TBSP. chipotle peppers in adobo, pureed (use the same your leftovers from the taquitos)
- 2 cloves garlic, minced or about 1/2 tsp. garlic powder (to taste)
- salt, to taste
DIRECTIONS:
- Combine all the ingredients in a blender and season to taste.

- Cover and chill before using. My husband made this recipe and he was basically winging it with the measurements, so the ones I listed were our best guesses. So make sure you taste it and tweak it according to your taste before you serve it. If it is too hot, add more mayo or milk.
