I was kind of hoping to celebrate spring and make something fresh and colorful, but the weather had something different in mind. I still made something fresh and colorful, but I will have to postpone celebrating spring. Yup, it is snowing as I type. That’s Idaho for you. I guess I will have to wait until July to celebrate Spring. But for all you readers who don’t live in Idaho and are soaking up the rays and celebrating spring, here is my new favorite meal. It is easy to make and easy devour. I think I could have eaten half the pizza by myself if I didn’t exercise some self control. I would pick this over dessert any day. This post is making me so hungry.
I took some of the teenage girls in my church to a demo kitchen and we learned how to make this pizza as well as taco pizza and fruit pizza. All delicious. And I had a blast making pizza with my girls!
Ingredients:
For the Dough:
- 2 3/4 C. flour
- 1 TBSP. quick rise yeast
- 1/2 tsp. salt
- 1 C. warm water
- 1 TBSP. sugar
- 2 TBSP. oil
For the Sauce:
- 1 (8 oz) pkg. of cream cheese
- 6 TBSP.. mayo
- 1 tsp. dill weed (not seed)
- 1/2 tsp. garlic salt
- 1/2 tsp. onion salt
Toppings:
- Any raw veggies sliced thinly. I like broccoli, red peppers, carrots, mushrooms, and jalapenos. You can also try tomatoes, olives, cucumbers, zucchini, or anything else you want.
- Shredded cheese ( I like mozzarella).
Directions:
1. Preheat oven to 400 degrees. Mix the warm water and yeast in a bowl and let sit for a couple minutes until it starts to froth. Sprinkle about half of the sugar in with the yeast and put the rest into a bowl. Add the flour, salt, and oil to the bowl. Mix in the yeast and mix until combined.
2. Let the dough rise for about 5 to 10 minutes ( if you use normal yeast instead of quick rise, just let it rise for about 30 minutes). Roll out dough and place on pizza pan.
3.While it is rising, mix together the sauce. Just put all the sauce ingredients into a bowl and mix until combined. I halved the sauce recipe because I didn’t have enough cream cheese and I actually had plenty to spread out over the pizza. If you are going to really pile up the veggies, make the whole batch, but if not, a half batch should be enough.
4. Once the dough has risen and you have it rolled out, bake it for 8-15 minutes, or until it is lightly browned and is not doughy inside. While it is cooking, chop up the veggies that you want to use.
5. Let the pizza cool. Spread the cream cheese sauce over the dough. Sprinkle with as many fresh veggies as you want. Slice and eat!
