My mom makes the yummiest banana bread. It is everything banana bread should be. Moist. Sweet. Banana-y. I know most of you know how to make banana bread, but this is my favorite recipe ever. My mom has a few tricks to make the banana bread perfect. I will include them in blue.
Ingredients: (This recipe only makes one loaf. It is worth it to just double it.)
- 1/2 C. butter, softened
- 1 C. sugar
- 2 eggs
- 1 C mashed banana
- 1/2 tsp. vanilla
- 1/4 C. milk
- 1 tsp. lemon juice
- 2 C. flour
- 1 -1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
Directions:
1. Cream butter and sugar until fluffy. Add eggs one at a time and beat. Mush up bananas in a large measuring cup with a fork. Add to mixture. Add lemon juice, vanilla, and milk. Mix well.
2. Sift dry ingredients and add to the mixture. Mix well. Pour batter into bread tins. Don’t fill the bread tins very full. Even if the loaf is shorter, it will cook more evenly and will be more moist. It will take less time to cook this way, so be sure to keep an eye on them.
3. Bake at 350 for about half and hour. Half way through sprinkle sugar over the tops. Don’t over cook.
