Amazing! This was sooooo good. I have the Coconut Lime Verbena lotion from Bath and Body Works and it always smells like it would be delicious. This sherbet tastes like that lotion smells. It is light, fresh, easy, and non dairy. Oh, and grandma, you were wondering what to do with your left over coconut milk from the Thai Chicken Salad; make this for dessert!
Ingredients:
- 1 C. water
- 3/4 C. sugar
- 1 lime
- 3/4 C lime juice (from about 9 limes)
- 1-1/4 C. coconut milk
Directions:
- In a medium saucepan, mix the water and sugar. Grate the zest from the lime right into the sauce pan. Use the smallest size of grater or zester as possible. Heat, stirring often, until the sugar is dissolved.
- Remove from the heat and add the coconut milk and lime juice. Fresh lime juice is always best, but I just cheated and used it from the store bought bottle. Thoroughly chill and freeze according to the ice cream maker’s instructions.
Note: Taste it before churning. Add more coconut milk or more lime according to your taste. Some people like more lime and some like more coconut.
