Right now you are probably really intrigued or really grossed out by the thought of avocado ice cream. I was intrigued. I thought it might be yummy, in a weird way. It was easy to make and the color is an amazing brilliant green and the texture is very smooth and creamy. I personally didn’t really like it. It was a little bit too much like guacamole for me. My husband loved it though. It is sweet and tangy, but has the underlying flavor of avocado. If you are adventurous, give it a try.
Ingredients:
- 3 medium-sized ripe avocados (about 1-1/2 pounds)
- 3/4 C sugar
- 1 C. sour cream
- 1/2 C. heavy cream
- 1 TBSP. freshly squeezed lime juice
- Big pinch of salt
Directions:
- Slice the avocados in half and pluck out the pits. Scoop out the flesh with a spoon and cut into little pieces.
- Puree the avocado pieces in a blender or food processor with the sugar, sour cream, heavy cream, lime juice, and salt until smooth and the sugar is dissolved.
- Freeze immediately in your ice cream maker according to your manufacturer’s instructions.

When I go for bubble tea, I always get avocado bubble milk. I swear it tastes just like ice cream, but my boyfriend thinks its the most disgusting thing in the world…. I can't wait to try this recipe – I bet it is very similar to the bubble tea, and its a perfect colour for St. Patrick's day next month!
