These muffins are sooooooooo tasty! I got the recipe from my sister Lydia, who got them from her friend Jennifer. Check out her blog.
This is what she says about these easy, delicious muffins:
“You can use whatever schtuff you have on hand that needs to be used up. I’ve tried brown bananas, smashed sweet potato, chopped up apples with applesauce, grated carrots, overripe peaches…I’ve even tossed in some leftover oatmeal…and every single time I get a yummy moist muffin! So go dig around in your fridge. Find something mushy. Make muffins!”
Ingredients
Muffins:
- about 2 C. schtuff (see list above)
- 3/4 C. sugar
- 1 egg
- 1/3 C. butter, softened
- 1 1/2 C. flour
- 1 tsp.baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon (optional)
Streusel:
- 1/4 C. sugar
- 3 TBSP. flour
- 1/4 tsp. cinnamon
- 2 TBSP. Cold butter
Directions:
- Preheat oven to 375 degrees. Mash your schtuff. Add wet ingredients and blend.
- Gently add dry ingredients and mix until just moistened. (over mixing will make rubbery muffins). Scoop into a lined muffin pan.
- To make the streusel, measure the sugar, flour and cinnamon into a small bowl. Cut the butter in with a fork or a pastry cutter until incorporated and crumbly. Sprinkle evenly atop muffin batter.
- Bake for 19 minutes or until a toothpick inserted comes out clean.
For this batch of muffins, I used leftover oatmeal. I made a big pot of oatmeal with bananas, peanut butter, and vanilla for my husband. He liked it, but I am not really an oatmeal fan, so after one bite, I decided to make muffins rather than choke down the oatmeal. They turned out great! The were very moist and had a hint of bananas and peanut butter. You couldn’t even tell that they had oatmeal inside.
