This is a very tasty little dip. It is easy and healthy. A great snack for taco night or a party.
Ingredients:
- 1/4 C. soft bread crumbs
- 2 TBSP. water
- 1 can white kidney beans or Great Northern beans, rinsed and drained
- 1/4 C. slivered almonds
- 2 TBSP. lemon juice
- 2 TBSP. olive oil
- 1/4 tsp. salt
- 1/8 tsp. cayenne pepper (I like a little bit more than this)
- 3 cloves garlic, minced
- 2 tsp. snipped fresh oregano or basil or 1/2 tsp. dried oregano or basil
- 1/2 C. salsa
Directions:
- Put a piece of bread into a food processor until crumbs.combine bread crumbs and water. Set aside to soak for 10 minutes.
- In a the food processor or blender combine beans, almonds, lemon juice, olive oil, salt, cayenne pepper, and garlic. Cover and blend until almost smooth.
- Add bread crumbs, salsa, and oregano/basil.
- Cover and chill for 4 to 24 hours. Serve with chips, pita chips, and/or vegetables.

I'm going to try this bean dip! I have always loved white beans. I wonder why you put bread crumbs in it. Interesting.
