I like pie, but I don’t really like traditional pie crust. It is too heavy for me. I found this recipe for apple pie with an almond crumb crust. It is much lighter and it tastes delicious and crumbly. I made it for my family and my grandparents and they all loved it. My little sister even liked it and she doesn’t like apple pie!
Ingredients:
- 3 1/2 lbs. assorted apples, peeled, cored, and cut
- juice of 1 lemon (2 TBSP.)
- 1/3 C. sugar
- 3/4 tsp. cinnamon
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. salt
- 2 TBSP butter, cut into small pieces
Almond crumb crust:
- 1-1/2 C flour
- 1 C plus 2 TBSP blanched almonds, finely ground
- 1/2 C plus 22 TBSP sugar
- 1/4 tsp. salt
- 1-1/2 sticks butter, room temp, in small pieces
Directions:
1. In a large bowl, whisk together flour, almonds, sugar, and salt. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Evenly and firmly press a little more than half of the crumbs into the bottom, up the sides, and onto the rim or a glass pie pan. Press firmly and freeze pie shell until firm. About 15 minutes.
2. In a large bowl toss together, apples, lemon juice, sugar, cinnamon, and nutmeg, and salt. Pour mixture into chilled pie shell, mounding apples slightly in the center. Dot with butter, sprinkle the remaining crumbs in clumps over the apples to cover completely.
Bake for about 1 hour at 350 F.
