By the time you read this post, I will be on vacation! We are going home for family reunions and to see my brother who has a short leave from the army. In my excitement to leave and the rush to get everything done before we make that 10 hour drive, I must have done something wrong. The first round of muffins never got muffin-like and the streusel was hard instead of crumbly.The truth is, I kind of created this muffin myself using this recipe as a base. I should just stick to the experts’ recipes. Nevertheless, the muffin tasted fantastic! Just like peach cobbler in a muffin.
After my extremely delicious, but ugly and weird-textured batch I decided to try a few things different and the second time I had beautiful, peachy muffins with a perfect streusel. Just follow the tips I give along the way and you will love these muffins. Despite my mess ups, it is a really easy muffin to make.
Ingredients:
- 2 packets of peaches and cream instant oatmeal
- 1 large can of slices peaches
- 1 egg
- 1/3 C. butter, softened
- 3/4 C. sugar
- 1 –1/2 C. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2tsp. cinnamon
Streusel:
- 1/2 C. sugar
- 3 TBSP. Flour
- 1/4 tsp. cinnamon
- 2 TBSP. cold butter
Directions:
- Make the oatmeal according to packet instructions. (Don’t make it to runny or your muffins will be too moist and wont cook up.)
- Add peaches to the oatmeal until the oatmeal/peach mixture is equal to 2 cups. (Try to drain as much juice from the peaches as possible or the muffins will be too moist and wont cook properly.) Mash up the peaches within the oatmeal.
- Add the egg and butter. Mix well.
- Add the dry ingredients and mix briefly. Just enough to moisten all the dry ingredients. There will be lumps. That is ok.
- Pour into lined muffin tins and top each muffin with a chunk of peach. Bake in a preheated oven at 375 degrees F. for 19minutes or so. While they are cooking make the streusel.
- To make streusel: measure the sugar, flour, and cinnamon into a small bowl. Cut the butter in with a fork or a pastry cutter until incorporated and crumbly. Sprinkle evenly over the muffins after they have cooked or about half the time. (If you put the streusel on before you start to bake them, it will mix with the juice from the peach on top and it will crystallize in a weird way.)
The best part is the big gooey peach in the middle. Just like peach cobbler!
So to recap, here are all the tips you should follow to get pretty, peachy muffins.
- Make your oatmeal on the thick side
- Drain as much juice as possible from the peaches you mix in
- Drain as much juice as possible from the peach you put on top
- Don’t over mix once you combine the wet and dry ingredients
- Don’t sprinkle the streusel on until half way through the cooking time.
I know I said this last week, but I think this is my favorite muffin to date!
