This Sweet Potato and Mushroom Hash recipe came about when I was in need of something to go with my breakfast-for-dinner Savory Whole Wheat Waffles Topped with Fried Eggs. I felt like I needed to add some more veg to the meal. And when the chill in the air makes its way into my home, I start craving Thanksgiving-y foods. Butter, shallots, garlic, sage = heaven.
This reminds me that I miss my little sage plant that lived for me all winter long, even through snow storms. I couldn’t believe it. In the dead of winter, I could still go out an pick a leaf of sage. Maybe the person who inherited my planter box when I moved, will keep that little plant going. I gave it to her clear of any plants, except that one lone sage plant.
This sweet potato and mushroom hash is perfect for breakfast in the place of hash browns, but it would also make a great Thanksgiving side dish or a cozy lunch.
